Why eat Bison (Buffalo) meat?
It is low calorie, low fat, low cholesterol, and it tastes GREAT! Bison is a wonderful healthy red meat with all of the flavor and texture of beef.
If you didn't know what you were eating, you would probably think that it was the best beef you ever tasted. It's rich in protein and high in iron yet is lower in fat, calories and cholesterol than skinless chicken or turkey. In fact, Bison is one of the low fat meats recommended by the USDA as part of a balanced & nutritious diet. Bison meat is naturally flavorful and tender. You don't need to spice it up with a lot of extras or hide the flavor with steak sauces – it’s just that good!
It is extremely healthy.
It's hard to believe, but Bison has less fat content than even chicken, turkey, or shrimp! Due to their nature, buffalo are handled as little as possible. They spend their lives on grass, just as they always did. Their meat is not full of drugs, antibiotics, nitrites, or chemicals. Many people who have problems eating other red meats, can often eat buffalo without any problems. Buffalo don't get cancer. There are at least two studies currently underway to find this immunity secret in buffalo blood. We have barely begun to find out, scientifically, what the Indians knew all along. Buffalo meat is for everyone, from dieters to athletes. NOTE: Buffalo are no longer an endangered species.

**NEW** Scottish Highlander Beef
We recently discovered a small but quality source for grass-fed Scottish Highlanders. At first I thought they were just neat looking and unique cows but have since discovered these were actually raised for Royalty consumption. No commoners were ever permitted to feast on this meat. They are a very ancient breed of Scottish heritage and are known for their hardiness in their rugged native Scottish Highlands, with high rainfall and strong winds. They are affectionately referred to as "Hairy Coos" and a group of Scottish Highlanders is known as a fold, not a herd. They are the most efficient foragers and browsers, used as live "bush hogs" because they eat most all nuisance plants. This maintains a truly organic method of pasture management. Another very interesting fact is that their meat is genetically, substantially leaner than other beef because they get most of their insulation from thick shaggy hair rather than subcutaneous fat!! Wow, that makes sense.

The Rock House will have ground highlander beef sliders and steaks available only in very limited quantities. Our very discriminating and loyal guests are invited to give this lean and flavorful beef a try – treat yourself like Royalty!!

- The Swabian Hall (pig) breed was started by King William I of Württemberg, Germany who imported ultra-fatty Chinese Meishan pigs in 1820 to crossbreed with the ultra-lean Russian Wild Boar that was indigenous to Germany at the time. His goal was to perfect the balance between fat and meat in a new breed of pig.
- Swabian Hall in their purest form are only located in Baden-Wurttemberg Germany but American farmers have been raising a “close to original” version for 150 years. The all black Iowa Swabian Hall is becoming a popular heritage breed because of its near perfect balance of lard to lean and succulent flavor.
- Swabian Hall meat is not gamey tasting; this pork is known for it's unique, incredibly juicy flavor. The mono-unsaturated fat has a melting point similar to olive oil. It is high in good cholesterol and low in bad cholesterol, and high in Omega-3 fatty acids.
- We will have cuts available only in very limited quantities. Our very discriminating and loyal customers are invited to give this unique pork a try.
